Sparkling Rosé

Cave Ridge sparkling Rose’ has become a favorite of many of our guests. It is produced from Cabernet Franc that is harvested earlier than any of our red grapes. The earlier harvest provides a juice that is higher in acidity, which is important for a good quality sparkling wine. The juice is only allowed to soak with the skins for several hours to draw out the right amount of color and tannins. This is a critical part of the process, because too much contact with the skins can result in a wine that is too bitter, or tart when it is naturally carbonated through a second fermentation process.
